From Iceland with Love: Day 3 – Eldhraun Lava Field. “The vast Eldhraun lava field (โ€œFire Lavaโ€œ), is in the south of the Icelandic highlands was created in one of the greatest eruptions in recorded history and is of the largest of its kind in the world. The Lakagigar craters were also created during this eruption.

This eruption lasted from 1783 to 1784 and is known as the Skaftareldar (The skafta River Fires). This was a cataclysmic event for Iceland and beyond. In Iceland it lead to diease, crop failure and disasters. The eruption affected Europe as well. In Great Britain, that summer known as the Sand-Summer in Great Britain due to the fallout of ash and it is believed that the airborne haze and blocking of sunlight may have contributed to the French Revolution.
Despite the abysmal effect the eruption had, this lava field of 565 km2 is today one of the most stunningly attractive ones in Iceland.

The area features one of the most magnificent lava tube systems in the country, located north of the Lake Laufbalavatn. More than 200 caves have been found there, extending for more than five kilometers and 14 cu. meters.”

Funniest bird I’ve encountered in a while. This guy popped up on the side of the road while I was stopped to photograph the scenery. He reminded me a bit like a fumbling professor, darting one way, then retreats, then ducks, pop up, darts, repeat. Funny creature to watch.

Time for one of my favourite things to make and eat… My basil pistachio pesto! :) This is a recipe I came up while living abroad in SE Asia, and needed to find ways to use up the excess amounts of basil harvested while not finding pine nuts. I actually prefer the pistachio flavour to pine nuts, nuttier and fuller flavours.

To be honest, I’m not a huge fan of raw or cooked figs. I prefer them dried. Now having experimented more with them, I like this fig, honey, goat chrese  galette after a drizzle of reduced balsamic vinegar. So much better now, it helps to balance out the flavours. Yum! I will be writing out this recipe soon :)
