fermented shark

So the fermented shark was decent, like a very ripe strong soft cheese. The locals on average eat it only on special holidays and festivals that celebrate old tradition. Some of those in smaller fishing villages or just old school may eat it more often, as per their preferences. Of the three waitresses here, none of them like it very much 🙂

I had no idea what to expect for the Minke Whale dish. The chef made it tatami style, it was darker than the darkest tuna sashmi I’ve eaten. Flavour is similar but lighter, and very clean tasting. Texture is also smoother except for the sinews. Served on a bed of sweet potatoes purée and caramelised raspberry sauce.
